Course overview
The National Canadian Culinary Institute’s (CCI) practical exam consists of multiple elements. An 8-hour written component where students follow guidelines to produce a fully costed multi-course written menu including recipes, workplan, and food requisitions. This written component must be completed before moving into the second part: 3-hour menu preparation and planning, followed by 8-hour preparation and presentation of the multi-course meal for a panel of CCI judges.
Condition: To earn Certified Chef de Cuisine (CCC) desig, students first apply for/be accepted into the prog at Canadian Culinary Institute (CCI). For this course you must be registered with CCI & show proof of registration.

For the 8-hour Written exam on Wednesday April 30, on arrival at the Akerley Testing Centre, candidates will need to sign in with a Photo ID to complete the registration before taking your exam. NSCC students must provide their NSCC Student ID W number. For the 8-hour practical exam on Thursday, June 5, candidates are permitted their recipes, workplans, and whatever personal tools they deem necessary to prepare their menu. Breaks are self-managed through the day as with any daily operation in the kitchen. Please note that the judging will begin at noon and will finish at approximately 5 pm. The time from 5 - 8 pm is for tabulations and feedback for the candidates, and candidates can stay for this if they choose.
Additional costs and fees
