Shaw’s culinary team is run by Red Seal Chef Darius Martin, who has over thirty years of experience in the hospitality industry. Chef Darius has run hotel kitchens across the country, including three on the island’s North Shore. Double-gold medal wins with Culinary Team PEI, as well as three first place PEI International Chowder competitions. Darius has also been a food designer on several film shoots.

KITCHEN STAFF/SERVERS WANTED at Penzie’s Bistro
Bistro-style restaurant overlooking the water – catering to nightly dinner service and occasional special functions. We are ten minutes from the Charlottetown Airport.
With the 2024 summer season quickly approaching, we are looking for candidates to join our casual, fast-paced, team-oriented environment on the beautiful Brackley Bay. We are hiring for the following positions:
-Sous Chef
-Prep Cooks
-Line Cooks
-Dining Room Servers (minimum wage, plus gratuities)
Additional kitchen staff information:
-Wage: $17.00-$22.00/ hour (plus gratuities);
-Full-time seasonal (June-October);
-Staff accommodations on site are available, if necessary – Room & Board = $60.00 per week;

Shaw’s Hotel Kitchen Duties
· Maintain a clean and professional appearance
· Maintain professional conduct and team attitude
· Arrive at work on time and prepared
· Be flexible to possible schedule changes
· Ensure kitchen, work areas and fridges are clean and sanitized
· Keeping daily sanitation, refrigeration and dishwashing charts up to date
· Prep assigned work stations for service
· Work assigned station i.e.. Garde Manger (cold station) Entremetier (soups, pasta, vegetables, pizza etc.) Hotline (ovens, pans, grill, meats) Dessert Station (Plating and garnishing) Expediter (Calling the line. Liaison between kitchen and Servers. Plating and garnishing)
· Preparing for Banquet functions I.e., Weddings, Barbecues, business meetings, family reunions etc.
· Consulting with Chef in designing daily specials
· Pride in quality and presentation
